Strawberry Rhubarb Vinegar Shrub
Making a shrub mixer with organic farm fresh rhubarb and strawberry vinegar
Equipment
- 1 qt mason jar
- 1 small saucepan
Ingredients
- 2 cups organic rhubarb Klickitat Canyon Winery
- 1.5 cups Organic Strawberry Vinegar Klickitat Canyon Winery
- 1.5 cups cane sugar
- 1 sprig mint optional
Instructions
- Chop 2 cups organic rhubarb to 1/2 inch pieces
- Place rhubarb in Qt mason jar and cover with 1.5 cups Organic Strawberry Vinegar
- Let sit for 5 days
- Strain vinegar into saucepan and add 1.5 cups cane sugar
- Heat and let thicken to a syrup
- Wet rim of glass and place in sugar
- Cool vinegar shrub and place in glass over ice with sparkling water and other mixer of choice.
- Add 1 sprig mint
Notes
Feel free to play around with ratios in the mixing. We used 1/3 strawberry rhubarb syrup (shrub) and 2/3 sparkling water. This actually ended up making 6 servings. If you want it more diluted then just add more sparkling water and get more servings.
Same goes for the amount of sugar. We only used one cup of sugar and the final shrub drink can be diluted to create the right sweetness and flavor profile. The more sugar in the drink the more it will dehydrate you so consider what your body is asking for too.
Also we only let the rhubarb infuse 3 days and the flavor was great!
